Pancakes!

If you're familiar with Pampered Chef, the bowl in this picture is the smaller of the two glass bowls they sell. It's maybe four cups, max. As I make pancakes for my husband and me for dinner (yes, we eat breakfast for dinner at least once a week) I can't help but think of the days when I made gallons and gallons of pancake mix each week. I think back to the days when we had our diner, when I'd purchase flour by the fifty-gallon bag, when running out of pancake mix was AWFUL. When you make everything from scratch, that's how it goes. 

I remember one morning in particular when the Sunday brunch crowd was STARVING and I couldn't cook anything fast enough. I was down to my last batch of pancake batter, preparing to dollop it out on the grill for a lovely meal of raspberry white chocolate chip pancakes, when the container slipped out of my hand and fell on the floor, spilling in front of my entire bar full of hungry patrons. There was nothing to do but cry or laugh. So, I laughed. 

Now I make this tiny bowl of pancakes, and I still have leftovers. Funny how life changes, how time goes on and memories fade. I'll forever cherish my memories of the diner. Some days I think it would be fun to reopen, to let my passion for cooking take on a life of its own, especially since our kids are all graduated and out of the house. For now, I'm enjoying writing, recording my audiobooks, and preparing to attend book fairs and festivals this summer. Hopefully, I'll see you at an event! In the meantime, happy reading!

Your diner was the best! I bought 2 of your cookbooks! One for my granddaughter who loved to eat there when she came to visit from Maryland. I think of you everytime I go to visit my Maryland family as they have 8 of your coffee mugs on their kitchen counter.
